This easy fried fish recipe works well with tilapia and other white fish. I use red tilapia (Cá Diêu Hồng), which you can often find at Costco. The fish is marinated with just the seasonings, so no special preparation is needed. All seasoning amounts are the same!There is also no need to allow time for the fish to marinate. After the fish is generously coated with the seasonings, it can be easily placed in the pan right away. Add rice and vegetables and dinner is ready to go.

Tilapia or white fish. One large fish or two smaller fish, etc. Fillets are also acceptable.
Remove scales from fish, rinse well inside and out, and pat dry. With a knife, make deep diagonal cuts on both sides.
Heat vegetable oil in a large frying pan or wok over medium heat.
In a small bowl, mix ginger powder, chicken broth stock, salt, pepper, garlic powder, and onion powder; rub generously into fish and into the fillets.
Dust the fish with cornstarch and brush off any excess.
Heat deep-fat fryer to about 180°C. Carefully place fish in oil, starting with the head. Fry for 5 minutes on each side, then transfer to a wire rack or plate lined with paper towels to drain the oil and heat through in the residual heat.
