Dried guajillo peppers4 peppers

Onion, chopped1/2 piece
Carrot (peeled)1/2 carrot
sugar2 tablespoons sugar
Lemon juice2 tablespoons
White wine vinegar2 tablespoons
Cumin (powder)1 tablespoon
salt2 teaspoons
Black pepper (optional)1/2 teaspoon
Molasses2 teaspoons
Hot sauce (optional)as desired

Instructions

  1. Place dried chiles in a bowl and pour in about 2 cups boiling water.
  2. Let sit for 15 minutes until the chiles soften.
  3. Chop onion and carrot into small pieces.
  4. Drain the chiles and reserve the reserved broth.
  5. Cut the softened chilies into small pieces.
  6. Place chilies, bouillon powder, onions, carrots, sugar, lemon juice, vinegar, cumin, salt, black pepper and molasses in a food processor.
  7. You may add hot sauce to taste.
  8. Add 1 cup of the chili pepper stock and stir in a blender until all ingredients are well blended and a paste forms.
